Skillet Seared Chicken Sausage with Autumn Glory® Apples, Arugula, and Sparkling Cider Glaze


  • 1 or 2 tablespoons of olive oil
  • 4 uncooked spicy or sweet Chicken Sausages
  • 3 Autumn Glory® apples cut in half
  • ¼ cup sparkling apple juice
  • 1-teaspoon honey
  • 1-tablespoon grainy Dijon mustard
  • 1-tablespoon apple cider vinegar
  • 1 bunch or bag of arugula
  • Salt and pepper


In a bowl mix together sparkling cider, honey, mustard and vinegar and set aside. Heat the olive oil in a large cast iron skillet over a medium flame. Brown the apples cut side down for 3 minutes until golden brown. Flip the apples to cook on the skin side. Add the sausage to skillet sear on all sides. Add the sparkling cider sauce to the skillet and bring to a gentle simmer. Cover the skillet for 15 minutes or until the sparkling cider is cooked down to glaze. At this point the sausages and apples should be fully cooked through.  The apples should still retain their shape but be easy to cut through. Remove from heat and add 1 bunch of arugula, salt, and pepper. Serve in the skillet.
