Organic Cameo Apple Bread Pudding

Warm and inviting, this bread pudding is an easy dessert topped with a scoop of ice cream. Or better yet, create a decadent breakfast and serve with coffee or tea! Shannon Feltus of Urban Farm Foods created this recipe as a way to use up leftover kitchen ingredients. Day old bread works great in this recipe. And… if you happen to have apples that have been sitting on your counter a bit too long, throw them into this pudding! Baking apples is a great way to make sure you use all the fruit purchased and prevent food waste.

Yields: 6 servings

Skill level: Easy

5 thick slices of bread, day old French bread works best
3 tablespoons melted butter
2 organic Cameo apples, chopped into ½ inch chunks
½ cup chopped pecans or walnuts
4 eggs beaten
2 cups milk
½ cup sugar plus ¼ cup for topping
2 teaspoons vanilla


Preheat oven to 350°.

Break bread into one or two inch pieces into a baking pan. Mix in apple pieces and chopped nuts. Drizzle melted butter or margarine over bread and apple mixture. In a medium mixing bowl, combine eggs, milk, ½ cup sugar, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture. Sprinkle remaining ¼ cup sugar evenly on top.

 Bake 45 minutes, or until the top is browned and springs back when pushed. Cool before serving.
