Cameo® Apple Chicken Salad
Preparation Time: 10 minutes
Makes: 6 (1 cup) servings
4 chicken breasts, poached and shredded
3 Cameo® apples, diced
1/4 cup golden raisins
1/4 cup toasted pine nuts
1/3 cup fresh basil, chopped
1/3 cup mayonnaise
1 tsp. fresh lemon juice or apple cider vinegar
1 tsp. salt
1/2 teaspoon freshly ground pepper
Directions:
1. Combine chicken, apples, raisins, pine nuts and basil in large bowl.
2. Combine mayonnaise, lemon juice, salt and pepper in small bowl; stirring well with a whisk.
3. Add mayonnaise mixture to chicken mixture, tossing well to coat.
Substitution: Remove skin from 1 rotisserie chicken. Pull light and dark meat off bone; separate into shredded pieces. Place in bowl; proceed with recipe as directed.
Serving suggestion: Serve on top of romaine lettuce leaves or flatbread.
